Gloriously Seasonal: Brie with Apricot Jam and Caramelized Walnuts

I’m a food nerd.  Dare I say, a “foodie” even.  There, I said it.  These days the term “foodie” seems to drip off the pages of places like Thrillest or Eater thick with disdain.  This term for the food enthused is just not cool anymore (is it still cool to say cool?  I don’t know.).
9 But here I am, in love with food, a self-proclaimed foodie in all my cliched glory.  As a true foodie I am really, truly, fond of seasonal flavors.  I lovingly mash together the last dregs of the previous season into a dish that is quintessentially now.  Double cream brie sliced width wise and positively stuffed with apricot jam (that last hint of summer) and caramelized walnuts.  Serve it up at room temperature or wrap lightly in foil and bake until bubbling.

I constructed this buttery, honey sweet, toasted sugar and nut dream for a dear friend’s birthday celebration.  She didn’t even mind that I didn’t get her a gift.
